While sitting and pondering what to blog about on this gloomy Saturday I found myself with a hankering for pancakes.
Luckily my mother is a baking goddess and has many of the ingredients needed to make these beauties, so I raided the cupboards.
To make these spongey American inspired pancakes you’ll need:
225 grams of plain flour
1 tablespoon of baking powder
1 pinch of salt
1 teaspoon of white sugar
2 large eggs – beaten
30 grams of butter (melted then cooled)
300 ml milk
Start by weighing the ingredients and popping all the dry stuff (flour, sugar, baking powder and salt) into a bowl. Make a well in the middle of the mixture
Then add the wet stuff (eggs, butter and milk) into the well shape and mix together well, getting rid of any lumps. You can use an electric mix, or just a good old fashioned spoon.
Pour your mixture into a jug…this makes it easier transfer the mixture in to the frying pan.
Heat the frying pan to a medium heat, add a bit of oil or butter then pour in your mixture.
Give it 45 seconds to a minute, then flip the pancake over and cook for the same time.
Take off the heat, move to a plate and cover with your choice of topping!!
